Fairy cakes

Ingredients
4oz butter
4oz sugar
8oz self rising flour
A pinch of salt
Vanilla essence
2 eggs
Milk

2 1/2 tbsp butter
2-3 tbsp icing sugar
Vanilla for flavour
Jam (your flavour preference)

Pre-heat oven to gas mark 4 (177c/350f)
Mix butter and sugar together until smooth add the flour followed by the salt and eggs give a little mix a dash of milk until its nice smooth and a little thick (you don’t want it sloppy) then mix in a little vanilla.
Put in the oven until golden. (around 20 minutes)

Leave the cakes to cool make the buttercream icing by adding the butter and icing sugar together and mixing till smooth add a bit of vanilla for flavour.
Once cool cut out the top/middle of the cakes fill with a bit of jam and the butter cream cut the tops in half and put in the butter cream to look like wings and repeat. Dust with icing sugar.
